About Us


A unique name for a unique company... "Pédologues" is a French word denoting a soils specialist and one who studies soils. This name denotes the expertise of the company’s founder and president, James Brown, an agronomist and soil scientist.

Pédologues is considered a major producer of pepper mash for the hot sauce industry. It produces and ships several million pounds of pepper mash and powder to its 400+ customers yearly. In addition to its customers in the continental U.S., Pédologues also ships its mash to hot sauce in companies in; Hawaii, the Caribbean, Canada, Europe and the Middle East.

Pepper Operations

Mexico Fields: The majority of Pédologues’ fields are in Mexico where we grow and process mash from habanero, jalapeño, and serrano.

All our pepper acreages are from farmers under contract in the area with a long, and proven track record for pepper production.

The company’s current grinding and processing capability in Mexico has a capacity of producing 12 metric tons per day. After grinding, the mash is processed to a formula consisting of salt or vinegar in two 2,460-liter stainless steel mixing tanks. The processed mash is then transferred to food-grade storage tanks for holding and initial fermentation prior to loading and shipment.

Belize Fields: Over the past years, Pédologues has produced red and orange habanero, and scotch bonnet peppers. From the peppers grown in Belize, we also provide habanero powder.

Similar to its pepper fields in Mexico, in Belize Pédologues contracts with the local farmer/landowner for its pepper production. In Belize the production capability is increased each year. Most of this additional acreage is being placed into habanero and cayenne pepper production.

The climate in Belize affords several growing seasons within a year for both our habanero and scotch bonnet pepper fields it have been there. In addition the company will be able to rotate its acreages contract with other land from local farmers.

Overview of Operation

The company currently has in production pepper varieties in; 1) cayenne, 2) jalapeño, 3) red, orange and yellow habanero, 4) yellow Scotch Bonnet, 5) and serrano. Its current production level is in the millions pounds.

For large orders to its U.S. customers, Pédologues’ mash is shipped via truck tankers directly from our grinding operations to the customer. For its overseas customers, the pepper mash is packed in food-grade drums and shipped via 40’ ocean containers. Smaller quantities of pepper mash and whole peppers is shipped to customers from our main warehouse facility in the U.S..

All packing and/or storage containers are both FDA and USDA authorized. In addition, all of mash and whole peppers shipped to the U.S. carries FDA certifications and passes USDA quarantine.

In our main warehouse, Pédologues maintains an inventory of from 40,000 lbs.to 120,000 lbs of mash at any given time. However, its new warehouse facility now has a storage capacity our more than 600,000 lbs. of pepper mash, as packed in drums and bulk boxes.

In its fields, Pédologues utilizes the best seed available for its pepper mash production. It also implements some of the most modern farming methods available in bringing its pepper fields to harvest.

Pédologues strives to maintain a year-around supply of mash from all varieties of peppers it produces. However, on some occasions when the unanticipated demand for a particular pepper sometimes exceeds production capabilities and exhausts the company’s stock. When this occurs, Pédologues makes every attempt to purchase additional peppers from local growers to replenish the inventory.

Pédologues’ company’s customer support is also backed up with the agricultural background, education, and hands-on farm experience of its staff. With Pédologues©­ agricultural credentials, it is qualified to answer questions and provide its customers with technical information pertaining to the pepper mash it produces. Pédologues’ staff also has agronomy and soils consulting experience throughout the U.S. and world.

In addition to its pepper production, Pédologues is dedicated to promoting wise and long-term use of land, as well as environmental protection of this valuable resource.

In support of this claim, Pédologues has worked on State Department AID and United Nations sponsored projects to advise, consult, and educate developing countries on the various agronomic, soils, and other farming-related concerns. Specifically, Pédologues has past experiences on; crop feasibility studies to combat world hunger, agricultural and ecological zonation studies, and water management studies for irrigation and also for flood control projects.

Pédologues is confident that it has the capability and expertise to provide the quantity of peppers and mash its customers needs, at the quality they expect and deserve, and at a price they desire.
